  • 1 tablespoon olive oil
  • 1 onion, chopped

  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika

  1. Heat oil in a large pot over medium heat. Add onions, garlic, and peppers and sauté for 5 minutes, until vegetables are softened.
  2. Add the spices and cook for another minute.
  3. Add beans, tomatoes, tomato paste, and vegetable broth. Bring to a boil then reduce heat and let simmer for 45-50 minutes.

  • 8 oz. rice noodles

  • 2 green onions, sliced
  • Sauce:
  • 3 tablespoons soy sauce

  1. Cook rice noodles according to package instructions.
  2. Combine all the sauce ingredients in a small bowl and set aside.
  3. Heat up oil in a large pan or wok over high heat. Sauté onions, garlic, and bell pepper until the vegetables are soft.
  4. Add cooked noodles and sauce to the pan and toss to combine.
  5. Stir in the bean sprouts and cook for another 2 minutes.
  6. Dish up and sprinkle the top with peanuts and green onions.

3. Vegan Brownies

Who said vegans can't have dessert? These vegan brownies are moist, delicious, and easy to make. Even non-vegans will love them!


  • 1/2 cup flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup granulated sugar
  • 1/4 cup non-dairy milk
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract


  1. Preheat oven to 350°F
  2. Mix together flour, cocoa powder, baking powder, and salt in a medium bowl.
  3. In a separate bowl, mix the oil, sugar, non-dairy milk, applesauce, and vanilla extract.
  4. Mix the dry and wet ingredients together until well combined.
  5. Pour the mixture into a greased 8x8 baking pan and bake for about 25 minutes.
  6. Let the brownies cool off before slicing and serving.
